For more than twenty-five years we have watched her do everything
from face painting to home remodeling to cake decorating.

When no molds are available for the base of a new craft project
she has in mind, Joan simply makes her own.
She manages to achieve consistent quality in large quantities,
but can also create a one-of-a-kind design that just suits the
occasion or mood you have in mind.

She paints whimsical, bigger-than-life winter scenes on store windows at Christmas,
and then switches modes to create exquisite bridal accessories.

When people come to her with a design problem,
again and again we've heard her say, "I can do that."

Here's Joan's recipe for a vegetable dish she says even kids will like.
And it's low-fat.

Squash Casserole
8 small zucchini or yellow crookneck squash (or some of each)
1 medium onion
1 stack celery
1 clove garlic (or garlic powder to taste)
1/2 cup self-rising cornmeal
1/2 teaspoon seasoned salt
3 Tablespoons liquid-style no-fat margarine
salt and pepper to taste
Mix salt, pepper and seasoned salt (and garlic powder if using) with the cornmeal.
Cut zucchini or squash into cubes. Dice finely the onion and celery.
Pour liquid margarine over diced vegetables and mix well. Sprinkle the cornmeal mixture
over the vegetables and mix to coat evenly. Spray a 2-quart casserole dish with nonstick
cooking spray. Put the vegetable mixture into casserole. Cover and bake at 350 degrees
until mixture browns a bit on the top.


This busy lady also gives cake decorating, cooking and candy-making classes
in her community and (starting in April 2000) on a local Chattanooga TV station.

TIP: Joan says she has finally found a spatula
that stands up to the rough treatment she gives during classes.
This one doesn't melt while stirring hot dishes, break while mixing thick icing,
or stain from even black food coloring.
